preservation Vinegar n salt only

Is there such a thing as just blending peppers with vinegar n salt and come up with this



Trying to dulpicate it. I know thats all they use and it lasts forever on fridge. Its mainly piquin peppers n im trying to do the samw with some super hots to preserve them instead of just drying them. Is that refered as a salsa or puree?
 
You can use some water also or a better vinegar. Never use white distilled that is not marked for cooking use or "Premium," the cheap stuff usually in plastic bottles is a petroleum product mainly used for cleaning but some people buy that for food.
 
Try rice wine for a mild white.
 
Pepper vinegar can last for years on the shelf. Ive got a bottle of mild pepper vinegar well over 5 years old and the flavor is incredible. Way back in the mid 1800s, that was common in the beginning. Just peppers, vinegar and maybe some salt. Its more or less how hot sauce and Avery island (Tabasco) got its start but back then is was medicinal before becoming culinary.
