Darn that Kitchenaid cookbook!

I got a 50 lb. bag of bread flour at Cosco a couple weeks ago, so today I had time and intention, so I made some bread. The Missus got herself a fancy Kitchenaid cookbook to go with her even fancier Kitchenaid mixer, so I decided to discover what the fuss was about...The white bread came out better than any bread I've ever baked, their recipe was simple enough, so it became a thing to step up the level; I turned a few pages to a "pull-apart garlic loaf" that looks just like this in the book:

I never cook out of a book without adding/changing a little thing here or there, and so I added some ground habanero to the spice blend in the recipe--EVERYTHING ELSE WAS BY THE BOOK. I'm pretty persnickety for crossing eyes and dotting tees, and I'm absolutely positive I put the exact correct amount of 'gredients in the bowl. After a half hour, however...

This just got out of hand, and out of hand fast. It's supposed to rise an hour (at least), and after Mamma came through the room and chuckled something about a side dish called 'coiffure de la Sideshow Bob' I 1) Turned on the oven, and 2) opened a Fat Tire. Can you imagine something like that crawling up your leg under the covers at night?
 
They look insane. They pull apart as advertised. They are a little crunchy at one end...But the two tablespoons of ground habanero? PRICELESS!!

Oh yeah, the family's diggin'it with my homemade ham-n-bean soup! They call me the Slumgullion King in this house, got a gift for accidental epicurean delight.

So far the Kitchenaid book is becoming my new favorite. We have a 327 year old Betty Crocker book that was handed down from who knows how many moms and grandmas to find its way here, but the Kitchenaid is a winner!

Perhaps the cookbook intended that "regular" yeast be used (slower acting), instead of instant or bread-machine yeast? A little alien-looking, but I'm glad it worked out well in the end!
 
Well I'll be damned--geeme's right, I just looked at the jar of yeast--QUICK RISE FOR BREAD MAKERS!! We don't even have a bread maker.



How did I get so lucky?
 
LOL! You have a bread-maker - - - you!  :D
 
Good news is that you can do a cooler rise, as D3monic suggested, or get some no-knead bread recipes to try as use for that yeast. All the no-knead recipes I make use the instant or bread-machine yeast. ("No knead" is kind of a misnomer, as it is the yeast basically doing the kneading for you.)
