Spicy Pepper Slaw

Here is the recipe for the pepper slaw I made the other night:

For the slaw:
1 head of green cabbage shredded
1 golden apple cored and finely chopped
1 carrot finely chopped
2 large cayenne peppers finely chopped
3 jalapenos finely chopped

For the dressing:
1/3 to 1/2 cup apple cider vinegar (to taste)
2 Tbs coarse grain mustard
2 Tbs your favorite hot sauce
1 1/2 tsp minced garlic
2 Tbs coarse salt
1/3 cup sugar (I used turbino)
1 tsp red pepper flakes
1/2 tsp celery seed
1/2 to 1 tsp fresh cracked black pepper (to taste)
2 Tbs mayo

To make the dressing add the salt mustard and garlic to a non reactive mixing bowl and mash to a paste with the back of a spoon. Add the vinegar, hot sauce, sugar and spices. Mix well to combine and add to the slaw. Mix well and let sit 30min to 2 hrs in the refridgerator. When ready to serve add the mayo and mix well. Feel free to experiment with different peppers, this is just the way I made it so it was mild enough for my non chilehead dinner partners. I am sure some Fatalii or habanero would be great in this.
