  • 8 lbs Maris Otter
  • 7 lbs Breiss Pale Ale 2 Row
  • 8 oz Weyermann Carafoam
  • 2 lbs Flaked Oats
  • 0.5 lb Rice Hulls
Hops:
 
  • 1.0 oz Falconer's Flight, 1.0 Calypso - 10 min
  • 1.0 oz Azacca, 1.0 oz Jarrylo - 5 min
  • 2.0 Citra, 2.0 oz Motueka - hopstand for 30 min at 120 degrees
  • 1.0 Citra, 1.0 oz Mozaic, 1.0 oz Galaxy - Day 3 fermentation
  • 1.0 Citra, 1.0 oz Mozaic, 1.0 oz Galaxy - Dry
Yeast:
 
  • Wyeast 1318 starter
 
Other:
  • 5 oz corn sugar for priming
  • 1/2 tsp yeast nutrient - 10 min
  • Muntons Plain Extra Light DME for yeast starter

  • 152.2 F, 4.50 gal
Sparge:
 
  • 170 F, 6.64 gal
Ferment:
 
 
  • 66 F for 7 days with hop addition on day 3
  • dry hop 4 days
  • bottle on 29th and ship on 30th

Ready, Set, Ferment!  I started out with a blow off tube because I heard this strain can be pretty violent.  Didn't get a picture of it because I was too busy cleaning up but the next morning I came down to see a big mess as the 1 liter Erlenmeyer flask was way to small to handle the ferment and there was overflow all over the floor from the violent ferment.  Changed it out to a 2 liter Erlenmeyer flask and things continued on just fine
 
 

Dry hopping.  Final Gravity was 14, forgot to take pic 


 
Bottled 11/29, shipped 11/30 - Please wait at least 7 days from bottling to assess so bottle conditioning can carb (12/06)
 

 
 
 
 
 
Is 'green-ness' going to be appreciated or criticisized?
 
Or, are we aiming for one that's drinkable the 1st week of January? - is another way to put it ...
 

The opposite being, "this takes exactly how an (eventual) RIS should taste at 5 weeks" ...
 
Hopefully that makes it clear what I'm asking ...
 
 
I also anything was allowed ... Have the plan to brew Correhuela if possible, and if not, to brew wheebz own recipe for it, since I think that could provide the bestest possible feedback ...
 
 
 
With a 3 week turnaround, I will be wanting to brew this sometime next week so not to push the button too early but what will be the POL for this one?
