Cheese Hash with Sausage
• 2 Diced Potatoes
• ½ Diced Onion
• 2 Diced Jalapeños
• Galic S & P, Chipotle, Red Savina, Cayenne powders.
• 1 lb Breakfast Sausage
• 2 C's Shredded Tillamook Cheddar
• Poached Eggs
1.) In a pan add some oil and diced potatoes, when lightly browned add Onions, Jalapeños, S & P.
2.) In another pan start browning the sausage. When browned and finely crumbled, add to Potatoe hash reserving a couple TBS's and the drippings. To the remaining drippings add 2 TBS flour and make a light roux. Add 1+ Cup of milk and bring just to a boil. Add CHEESE slowly, hhwisking the whole time. Add some Red Savina Powder and remove from heat.
3.) In a small pan bring water just to a light boil and temper with vinegar reducing to a slow simmer. Drop eggs in and poach until whites are firm. Sprinkle with some Red Savina or Cayenne powder.
4.) Make some toast.
5.) Get a fork and a chair.

I have a repurposed spice Islands jar with "Hatch" written in sharpie on it.
Not a fan of mushy potatoes....but i'd shove that in my FACE!!

I just noticed, if you look close, the "Red Savina Fatalii Cross" label is taped over another label that is taped over the original label. I don't know why but that cracks me up.
Taking the time to scribble out everything else on the label, is even funnier than that!!
