bottling My xmas bottling is complete! (hab & Meyer lemon and garden mix)

here are my notes for the two batches. . . garden mix is everything i grow in the garden through out the year. . I throw in freezer bags. . at the end of the season it all gets mashed and fermented.
 
9/28/16 - habs & Meyer lemon
385 g habs
532 meyer lemon (3 lemons quartered peel on)
Half an onion
2 cloves og garlic
2 " ginger
Added 6% canning salt by weight of everything
Mixed 1 caldwells packet with 1 cup of water, added 1/2 half cup
10/26: it rose and fell a couple weeks ago.  It's patiently waiting, prob could use more liquid but no mold on top
 
12/10 - habs & Lemon Mix
A little less than 1/2 gal.  Smells fantastic.  Tons of citrus.  Simmered 25 mins.  Med food mill.  1000 ml yield.
Let cool to under 50 c for PH reading: 3.5
Add juice from 2 oranges and blended in a raw ripe mango, ph hung in there
also blended in 1/4 t xanthum

250 of onion and 2 cloves of garlic
6% canning salt by weight of all tht
Added 1/2 cup of that caldwells mix above

1/2 gal jar.  Simmered 25 mins.  Med food mill.  1/3 cup ACV.  Yield 1300 ML. 
Let cool to under 50 c for Taking ph reading: 3.7
[SIZE=14.6667px]also blended in 1/4 t xanthum[/SIZE]
