I found the Jungle curry paste. My market might even have it and i just over looked it.

 

This brand is fairly good

Ingredients: Ingredients: garlic, dried red chile, wild ginger, lemongrass, shallot, salt, galanga, sugar, kaffir lime, coriander seeds. Product of Thailand.

Every single market near me is out of the Mykuali white curry noodles. I even drove down to the huge market in China town. They did have Prima Taste brand that is very expensive. Online 4 packs can cost over $15 for 4 packs. The huge market had them for $10/4packs and that is the only way they offered them.

The packets include coconut cream powder and the curry paste packet is nicely spiced. I added some left over roasted chicken and fried tofu to mine.

I tried the Maesri Kaeng Par paste today. It is not what we would call curry. Its quite good but tastes nothing like curry to me. I used  5 cups of shrimp and dashi stock as the base. Red shrimp and cuttlefish balls for meat. The entire can comes out to less than 2000mg of sodium and its all natural stuff in it. Including the noodles, 14 shrimp and 8 cuttlefish balls it was plenty for 2 people.

Ah Lai white curry noodle ramen with some left over rump roast very thinly sliced. No other additions...Well more or less...I did add a little Korean pepper flakes. I was in a hurry after migrating my OS to a new Samsung SSD drive.

The noodles were pretty good with a nice gauge and chew. The broth was excellent – a nice spicy curry flavor that was rich and full

I usually take online food reviews with a grain of salt or in the case of packaged ramen over 1000mg of salt.

 

BUT the ramenrater has been really close to my taste buds. The Prima Taste made in Singapore are wonderful if you like curry with coconut. None of the closer markets carry this brand so it looks like i may be heading to China Town today. The Prima Taste Laksa and Singapore noodles flat out kick ass. I cant find the cheaper Mykauli brand anywhere but online.

 

I cant believe im willing to spend over $20 for 8 packs of instant noodles and i may end up with 16 packs at almost $50. These things are not cheap for ramen but im a bit fed up of finding something i like and then the store no longer has it in stock for months. Better get it while the "getting" is good.

The 2015  Prima Taste regular noodle versions of both were ranked 3rd and 5th. Only Mykauli ranked higher. It sucks because they are about half the cost and a tiny bit hotter. They also had a intense flavor besides just heat.

Prima Taste Laksa noodles with Argentine red shrimp, red onion and green onion. This is really good but i do like the Singapore Curry Noodles better. I wish i would have had some culantro and Thai basil on hand for this or even fresh Laksa leaves.

Finally got a chance to try the nong shim black. The noodles had a better structure to them, but the spice was less hot than their hot and spicy version.

Adjusted the Prima Taste Laksa to my taste. Added 1 tbs of Korean pepper flakes and about the same amount of vadouvan curry mix. Kept it simple with some left over dark meat chicken and some thinly sliced onion.

The close Asian market got in the Ah Lai white curry ramen again after telling me they could not get them anymore. At just under $1.50 a pack these are really good..I bought a dozen this time since my stock of Prima Taste is getting low again and its a drive to get more.

 

I think i will have some today with Vietnamese pork meatballs

Since i used a little more water than the directions it got

1 tsp Riken dashi stock instead of adding fish sauce

1 tsp vadouvan curry powder

1/2 tsp Spice Island red curry powder

1 tsp Korean pepper flakes

1 tbs coconut cream powder

1 tbs cilantro added just before it was done and another as garnish.

Get the Prima Taste brand Singapore Curry whole grain if you can find them. The others need more additions to come close and the Prima Taste noodles are the best ive tried. Mykuali brand is a close 2nd but i cant find them anymore.

This recipe looks killer and a great way to use just the noodles from a ramen. I must try this with added fried tofu puffs and some laksa leaf.....Yeah my plants have enough to spare now :D

You’ll need:

  1. In a large pot over medium heat, add the oil, garlic, ginger, and Thai red curry paste. Fry for 5 minutes, until fragrant. Add the chicken and cook for a couple minutes, just until the chicken turns opaque.
  2. Add the chicken broth, water, fish sauce, and coconut milk. Bring to a boil. At this point, taste the broth for salt and adjust seasoning accordingly (add salt if needed, or if it's too salty, add a bit of water). Pour the boiling soup over the dried vermicelli noodles in your serving bowls, add a squeeze of lime juice and your garnishes, and serve. The noodles will be ready to eat in a couple minutes.
  3. (Alternatively, you can add the noodles to the boiling broth to cook them, and then divide among serving bowls).

Prima Taste whole grain ramen with tofu puffs, a chicken leg quarter, some shallots, a splash of RedBoat and LAKSA leaves from the garden.
