Help with programming a temp controller

I'm hoping someone here can explain how to program this controller in layman's terms. I have managed to get it to go on and off at very close to the temps I want by playing around with it, but I still don't understand how to program it.  This hysteresis thing has me totally confused. Every time I try to read the manual, I feel like Charlie Brown listening to his teacher, whaaa whaaa whaaa whaaa whaaa.

I just read the manual again and think I've got it figured out. I've been trying to set a high and low temp, when I should set the temp I want to to kick on, plus the number I set  the Hysteresis to. Then when the temp drops to the programmed temp setting  it goes off.
 
So if I want it to turn a fan on to cool at 85 and off at 75, I would set the temp at 75 and the hysteresis to 10.  Can anyone confirm if I've got this right?

Well, given that the manual is written in some weird non-standard Engrish, some cornfusion is understandable.  
 
Yea, after reading the doc, I think you've got it right. Mode = C, Set = 75, Hyst = 10
Fan turns on when temps rise to ~85.1.  Turns off when temp reaches ~74.9
