smoking Healthy Fattie...if there is such a thing

During my winter months off I try and drop a few pounds by eating healthier bbq....here's a little fattie I put together less the bacon and cheese.
Half cooked some sweet peppers and Shiitake shrooms and let cool.
Washed some baby spinach.
2 pounds grnd pork flattened out and seasoned with my rub.

Fired up my BGE and cooked this at 250-300 degrees for two hours using some cherry blocks for smoke,I cooked it till it had an IT of 165 degrees.

Very tasty even though no bacon or cheese was harmed during this cook.
 
 
 
 
 
Ground turkey might work nicely too with some "Thanksgiving" type stuff inside...
 
Normally it would have the bacon weave and the high temp pepper jack through out..........but I really have to lose a few pounds..... 43 years sitting in a dozer pushing pedals has killed my knees....when im off in the winter I always lose a few and it really helps me out a lot.........trust me the cheese will return. :dance:
