fermenting Orange Habanero Ferment

Still had a couple bags of frozen pods .....put together a Orange Hab ferment.
 
1 lb orange habs
1 lb orange bell
1 lb nectarine
Red onion 7 oz
1 bulb garlic
Fresh ginger 4 oz
 
For a starter I used Cutting edge Cultures
Into a gallon jar with a layer of cheesecloth,food grade mesh and my ceramic weights.....keeps everything nicely under wraps for the next 100 days.

How much salt and other fluids.?
 

The only salt is in my brine........I use 3 tablespoons of coarse pickling salt to 2 cups of filtered water......i use enough brine to give me about 1/4-1/2 inch of cover.....any other fluids,juices or spices will be added when I process it.
