fermenting Anyone tried a Aji Pineapple/Lemon ferment?

Just wandering if anyone has done a ferment with either of these chillies? Preferably a strait ferment without other ingredients (except salt). Just want to know what it tastes like and whether or not these are suitable to make fermented sauces.

Thanks in advance

I have one pretty close to those ingredients .........this one will be processed in a couple weeks.

I've run a couple all aji ferments (pineapples/lemons/omni color).  I would say that they are indeed suitable for an all pepper ferment, though the bright 'citrus' type notes common to the fresh peppers are not really all that prevalent in the completed ferments.  They taste good no doubt - but not in the same way as fresh aji lemons do.

Sizzle Lips.. that looks like it's gonna be YUM

Smokenfire.. thats very helpful info. Exactly what I needed to know so thanks!

DWB.. I have read some descriptions saying that it does taste of Pineapple but have also read that it tastes slightly citrusy and the similar if not the same as Aji Lemon.

I have a plant loaded with green pods that will begin ripening soon so will be able to make my own comparison as I grew Aji Lemon last year.

Does anybody know if pickling these varieties will retain their fruity/citrusy flavours?

I find that the Pineapple Rocotto in my picture did have a citrus taste....and I thought it did have a slight pineapple aftertaste .....but that could be my mind playing tricks on me......But there defiantly is a citrus taste in these Aji lemon, pineapple peppers.....I think they would make for a great fermented sauce....when i process mine I am going to add a small amount of fresh pineapple to it.

The two are, in my opinion, rather similar but not the same in taste. Both do have a strong citrus flavour but the slight pineapple notes to the Aji Pineapple change the way that citrus registers, making it seem rather less like lemon, despite the base flavour not being much different.
I also found mine to have a little bit of vegetable taste that made them great for salad.
