fermenting chilies for fermenting sauce.

i was wondering if you could use frozen or dried chillis to make a fermentation sauce as ive got quite a few in the freezer & dried. never made a fermentation sauce & want to have a go at one.
 
I would think they would have to be rehydrated (I know...duh...) and thinking they might need a bit of something fresh with sugar to get it going.  Like maybe an apple, or carrot, and a cabbage leaf or two....The apple could be removed when the ferment is done, or just blender it up with the rest of the stuff.  Apples and carrots have a bit of thickening capabilities also, which may be of benefit.
 
Let us know if you get a dried pepper ferment going and how it works.
