Tomato soup... The right way! ;)

Who here didn't cherish this simple dish as a child? Back then it was Campbell's and Bunny bread with American cheese. Well here is my take on this classic...

46oz can of tomato juice
28oz can petite diced tomatoes
1 Vidalia onion, diced
3/4 stick unsalted butter
1/4 cup sugar
3 chicken bouillon cubes, crushed
1-1/2 cups heavy cream
1-2 teaspoons coarsely ground pepper
1-1/2 Tbsp dried basil
1-1/2 Tbsp dried parsley

In a large pot melt butter and saute onions until translucent. Add tomato juice, diced tomatoes, sugar, crushed bouillon cubes and pepper. Mix well. Test the acidity and add more sugar 1 Tbsp at a time if needed. Bring to just boiling. Kill the heat and add parsley, basil and cream. Mix and serve.

I made mine with a brie and swiss grilled cheese sandwich on sourdough bread. I like using Land O' Lakes garlic and herb spread to butter the bread. I also cook mine on a lower heat setting so the cheese gets really gooey.

:mope:   dang it...I was all set for some pics cuz I luuuuv tomato soup, it's a staple in the winter work lunch box!  But No Pics????   :(
 
 
Your recipe looks pretty good, thanks for sharing!   I could make this and set it up in 3-4 portions to be nuked and into the thermos for lunch~
 
As a kid I grew up coming home from school at lunch time and mom would have a grilled cheese and bowl of Tomato soup all ready for us.........when I read your Topic line I was getting ready for looking at a picture of your creamy tomato soup......the recipe does sound great.
 
lol, I remember very well drinking tomato soup at my dads office from the vending machine back in the early 60's, always loved Tomato soup, my fav. Will be happy to try your version. Adding sweetness is essential for that taste, I use honey.

Dragonfire, I agree that adding a sugar source is essential. You have to combat the acidity. Never tried honey in tomato soup, but I use honey to sweeten up a lot of stuff.

And as promised, leftover tomato soup with runzas I made tonight. This is why I'm fat!

lol, nice, my mother used to make runzas/ Fleishkuche, man I loved those things, could never duplicate her cooking. Need to get some Tomato's :)
