Yeah it looked pretty tiny, but I'm glad it turned out good. It's making my mouth water. :)

Mike,

If it gets any better looking than that, I've never seen it...

Ha! Thanks, Reggie

Not bad for only my 2nd brisket! ;)

I was pulling my freakin' hair out for a while throughout that cook, but it all worked out in the end!

Yeah it did! Nice job on that one.

When you can make it look like a meteorite and still have it be supple and juicy inside you're definitely doing it right.

Not really sure I want to try any pickled meat. I will stick with Bosss cucumber.

Mike,

Gonna sound weird, but in April here, there are usually some good sales on corned beef briskets that were not sold in March for St. Patrick's season (pennies on the dollar). Just on a whim last year, I bought a few, rubbed one down and smoked it as an experiment. Took it to work and it evaporated something quick... Not too shabby! Still get requests to do another.... Different but oh so delightful!

That's how a brisket should be lol! Dark crusty bark on the outside and warm, supple, juicy meat on the inside.
