Harissa

New ferment
 
 
1tbsp Cumin seeds
1tbsp caraway seeds
1 rounded tbsp coriander
2tbsp Smoked Paprika
1400gr Roma Tomato's
600gr red Sweet peppers
50gr dried Chile De Arbol
50gr dried Facing Heaven Peppers
44gr Garlic Bulb
1tbsp pink salt
1/2cup natural apple cider vinegar
1/2cup kifer
 
Fried Red Sweet peppers, blitz all.

Nice!  Curious to see how this turns out.
 
I've made plenty of harissa sauce and paste, but never fermented it.
and I always like to roast off the tomatoes and garlic in addition to the peppers.
