Was chatting up the woman at a coffee house at a festival.  Noticed the health certificate hanging on the wall.  She got 100%.  Most of our local restaurants do not get 100% & the coffee shop is essentially a shack in the woods.  Its at a ren fair.  Turns out there are exemptions to be had for many things.  In her case, the rest room rule.  Evidently, if there are restrooms available withing X number of feet then you do not need rest rooms.  Grey water can be handled by holding tanks or even a proper raised bed with under surface irrigation.  For an approved water source, since the hook up is a garden hose they use a three stage filter.

Anyway, in the back of her shop is a bakery.  They sell cookies, brownies, and a bunch of other goods.  While I am not saying her shop could produce shelf stable goods for prepackaged sale, I want folk to know that if they are considering doing something like that themselves it is not as scary as the official regulations say because there are exemptions to be had.  Still too scary for me.  If I ever go the route of hot sauces, it will be the copack route.  But dont let the rules in the book scare you.  Talk to your health official because I gotta tell you, this woman's shop is rocking, the food is good, and there is that 100% certificate hanging on the wall.
