Salted jalapeno rings

This is so simple a moron can do it.
 
About 2 cups of jalapeno slices
No more than a tsp of sea salt
1-2 tsp of vinegar
1-2 tsp of lime juice.
 
Salt and weep the jalapeno slices for about 30min. Mix is up a few times during the weeping.
 
About a tbs or two of juice will be released from the peppers. Pour off the juice if you want less sodium. Add your vinegar and lime juice. Mix it up and refrigerate immediately. I kept the juice from mine because i used a variety of jalapenos and some were really mild. Leaving the salty juice helps balance them out a little bit and slightly tames down the acid bite.
 
A quick pickle... I do it a lot when I want something in between the fresh and pickled I just do it differently... :)
 
It def takes the harsh edge off.
 
The salt and lime really brings out that "Jalapeno flavor". If you get what i call "duds" it can help out immensely if you have at least a few jalas with some zip. Adding a couple serranos works great too. IMO these are way better than typical canned/pickled peppers for nachos.
