Hot pepper jelly recipe

Firstly hello and welcome from the UK .... try asking your question in another thread I am sure you will get an answer I am sorry I do make chilli jelly but have never used cherries... sounds good though ... good luck
 
I've made a cherry pepper jelly, but don't have the recipe handy. From memory I believe it was around 10 oz peppers mixed, 12-14 oz cherries, four cups of sugar and 1/2 cup lemon juice, and pectin. Mine tasted good, but was a little too hot for most people, should have used few super hots, maybe more cherries. The best thing you can do is make a batch with what you think will work, then make notes on what to change for the second batch. Sometimes I use vinegar, but for something like this I'd stick with lemon or lime juice.
 
Here's a video I made of pepper jelly using pomegranate. It was very good, you could probably substitute cherries for pomegranate.
