recipe-help Looking for recipes using peaches

My peach harvest is nearly over and i'm running out of ideas on what to make with them. If anyone has salsa/hot sauce/ wing sauce recipes they wouldn't mind sharing I would appreciate it. Ended up picking over 2000 lbs this year and my wife is ready to finish up with them. I have a wide variety of supers as well as a bunch of green chillies to use. Thanks for the help.

Grilled peach halves and grilled vidallia onion slices... must be vidallia
 
First cut the peach halves and onion slices (about 1/4 inch thick) and coat with olive oil. Roast on the grill, not over high flame, because you don't want too much char to make your sauce dark. Top rack, lid shut roasting, or indirect, works. Flip onions once. Take all off when soft. Pop in a blender with rice wine vinegar, sea salt, a lemon squeeze. Pulse until like chunky salsa.
 
Next dice up some of the leftover onion and jalapenos (or pepper of choice), and tear or cut (kitchen scissors) 3 basil leaves into small pieces. Stir this "pico" type mixture into the salsa for your heat, crunch, and freshness.
 
When still warn, serve on top of pork chops, as a chicken drum or wing dip, on tacos, etc. When chilled serve with tortilla chips and as salad dressing by adding a little more vinegar (with grilled chicken, corn, etc.).
 
5# peaches
1 medium sweet onion
1/2c (or less) garlic
2 cups red/yellow/orange colored hot peppers
1Tbsp ginger fresh grated
2cups rice vinegar
1/2c lemon juice
optional-1/2c sugar to taste
pineapple juice as needed for consistency
ground coriander, cardamom, cinnamon or nutmeg as desired
 
cook, blender, package in woozy bottles or mason jars following directions in Making Hot Sauce 101

Mason Jar can the peaches in a medium heavy sweet syrup with a couple hot chiles, some spices like what I listed (cinnamon, nutmeg, card, cor), then when you want some cobbler, dump the jar of peaches in the baking dish, top with the crumble or biscuit topping, bake and DONE!  
 
 
 
Peach Bourbon BBQ Sauce: (not sure where I found this but credit goes to the originator)
 

Ingredients
  • 1 pound peaches, pitted and diced
  • 1 cup water, plus more if needed
  • 2/3 cup bourbon
  • 3 cups BBQ Sauce of your choice
Directions
  1. Bring peaches and 1/2 cup water to a simmer in a medium saucepan over medium heat. Reduce heat to medium-low, and cook until peaches are breaking down, 15 to 20 minutes. (If peaches get too dry, add more water, 2 tablespoons at a time, to prevent peaches from sticking and burning.)
  2. Remove from heat, and add bourbon. Return to medium heat, and simmer for 5 minutes. Add barbecue sauce, and simmer for 5 more minutes.
  3. Puree mixture in a blender. With blender running, slowly add remaining 1/2 cup water. Blend until mixture is smooth. Let cool, and refrigerate.
