overwintering Keeping my Habanero Pods Fresh over the winter?

Hello all,
 
So my 14 Habanero plants are really starting to take off. I get quite a few ripe pods off the plant each day. My question is - Whats the best way to preserve them to last over the winter?
 
So far I have been slicing them in half, tossing them in Zip Lock Freezer Bags and Freezing them.
 
I also just purchased a Food Dehydrator to Dehydrate the pods and grind them down into a Habanero Powder.
 
Any other suggestions?
 
 
 
 
Yup, cut in half so juices dont run, as in cut side up. Will depend on the moisture of you place, 6-12-24 hours, till they dont bend and will crack.

So as soon as i bend one and it no longer bends, rather cracks its good? Thank you, Sir.
 
Will they last over the winter in Zip Lock Freezer Bags?
 
Anything liquid I can put them in, in a mason jar to preserve them?
 
 
I would vacuum seal them if you want to keep them "fresh" in the freezer.
 
Once their dry just put them in a sealed bag/mason jar, if you have a vacuum packer great, just have to make sure the sharp now hard edges of the pepper dont puncture the bag when vacuuming.

The dried ones I am Grinding Up into a Habanero Powder
 
I both dry and freeze. I also use them in other cannings, such as the jelly mentioned above. Spread the love!
 
I always have a freezer full of everything. Yesterday, I shifted some of the contents and found half a gallon of ghosts from last year. What to do, what to do?
