Sounds like you would like West Texas or the Panhandle where it's not as humid. The bigger cities on that side of the state are El paso (if you want to look at mexico), Abilene, Lubbock or Amarillo up in the Panhandle. Google Texas Hill Country, I would say it's the most favorable area in Texas. It's the region around San Antonio and Austin, that's where I hope to be someday..

That video is pretty darn accurate
I couldn't live in San Antonio. I spent two weeks there in July and it's too hot and dry for me. It isn't the heat but no humidity made it unbearable. I would wake up every morning with dried blood in my nose and had to put damp towels on the hotel A/C.

There's great hunting and fishing in the Piney Woods, however it's humid all year round.
For fishing, you've got Toledo Bend and Sam Rayburn Reservoir.
