When to pick the peppers?

Hey guys:
 
I am growing a Carolina Reaper plant and it's got some peppers popping right now.  One pepper turned red about 2 weeks ago.  All the other are much smaller and still green.  When should I pick the red one off the plant?  I don't want it to go bad.  Also, I read that if you pick them off, it's less stress for the plant to keep nurturing the other fruit.

If it's been a while since it's ripened, then it should be fine. It doesn't have to stay on that long, but that'd be better for seed.
