First order of mustard seeds has arrived. Going to ferment several small jars with brown and yellow seed. Thinking a reaper mustard and maybe something tamer with some smoked pods. Probably do a handful of smaller jars incase any fail I don't lose all the seeds. I spent somewhere around $25 for 2lbs total
Those Frontier spices are awesome, just got a bunch.

You might check around. I can't find bulk mustard powder or yellow seed locally. Need to order some of the internet.

Yea I checked my favorite grocer that usually has lots of international items. Entire long isles designated to different regions. Mexican, polish, asian, indian ect. They also have really good selection of bulk spices but I didn't see any mustard seed other than the little spice shakers.
To me Louisiana style is aged peppers, vinegar, salt and nothing else.
Just talking the style name once you add spices or ingredients it's not LA style.

Wondering if I should open it and add a little more starter to it. I didn't realize how hot the contents where when I added my brine and starter. May have killed off the starter culture of lacto
Jar was pretty darn warm to the touch for a quite a while after filling.
Gonna need to burp that baby daily 2-3 times a day for next couple weeks.
