Comfort Food Thread

Searched and found one 7 years ago and instead of activating a necro thread with dead photobucket links I thought might start a new one. Winter here so probably gona do some sweet stuff :D
 
Had a craving for eggs lately. Rye bread/tomato with a slab of Havarti, Golden berry hot sauce and harissa sauce.

It's been done for a while but I had to get my buzz on= still going that route. Maybe it's the buzz but it's good enough to change the world. I'm joking, it just makes you fat if you eat too much.
 
The veggies came from the greenhouse and yeast rolls from the store cut in half and toasted.

Meatloaf and not your basic topped with ketchup wannabe meatloaf. BACON LOVERS meatloaf smothered in pocini mushroom gravy. Full of white onion and some poblano too. Any kind of taters to go with it. I prefer mashed but that didnt happen.

Roux gravy made from the drippings and the great dark caramelized mess that was on the pan. Aint no damn Kitchen Bouquet in this gravy.

I'm gonna have to do one of those on the smoker, that looks awesome. That's referred to as a Fatty in the BBQ world.
 
 
I'm going easy and cheap tonight. I've been cooking pork and beans. I haven't decided yet if I want it for the main dish or a side but it's smelling and tasting good right now.
I soaked a bag of navy beans last night and this morning rinsed them out and added seasoning, onions and some of the smoked pork steaks I cooked a while back.

Remember these from the smoker? I cut them up and added it to the pot, bones and all.

It seasoned these beans perfect, the beans are still on a low simmer, I might have to make some cornbread!!!!

I got my dad hooked on beans done like that since he cant have the higher sodium of ham and beans. Mostly country style ribs and just a little smoked hocks or jowls. He loves it with jalapeno hot sauce or Tabasco habanero. Sometimes just the hot vinegar i made.
 
Tonight I made my goolash casserole with chicken. Browned the chicken then browned the onions and bell peppers.

Then added a can of mushrooms, greenbeans, cream of celery soup and cream corn from the freezer.

Simmered that for a few minutes to get everything mixed up and added potatoes, re seasoned and in the oven at 375

40 minutes later and we're ready to eat. I prefer to cook it for another 30 minutes to reduce the sauce but it was getting late. I also like to add a cup of egg noodles when I add the veggies.

I bought some cajun sausage stuffed pork chops about a week ago, I'm a little disappointing because there wasn't much sausage in them but they come seasoned so that natural marinade made them a winner.
 
I usually bake them but tonight I tried them in the old Presto Fry Master Cooker 400 which is a pan style pressure cooker. I think everyone needs one of these, it makes cooking so easy and faster. Ebay probably has a few cheap.
 
I browned the chops on both sides to get that flavor in the pan, added onions and a little water to start making that gravy and added the chops back to the pan before the cover went on.

20 minutes under pressure and another 10 resting, these came out juicy and fall apart tender.

Served with baked sweet potato, greenbeans with mushrooms and onions

There wasn't much sausage but the flavor penetrated the meat and had excellent taste.
