Comfort Food Thread

Searched and found one 7 years ago and instead of activating a necro thread with dead photobucket links I thought might start a new one. Winter here so probably gona do some sweet stuff :D
 
Had a craving for eggs lately. Rye bread/tomato with a slab of Havarti, Golden berry hot sauce and harissa sauce.

Last night I cooked a pot of cut up turkey wings for supper, this is one of my favorite dishes. It's cheap and packs that turkey flavor and the wing tips with all of the natural gelatin makes a good gravy.

I've been wanting to make a soup with it for a while so I decided on a small pot of broth to make an Asian influenced bowl of turkey ramen.
 
I grabbed some gravy and turkey then made a broth with mushrooms, carrots and celery sticks. I pulled the meat off the bones and made a bowl of fresh Asian noodles.

I started prepping the bowl with the goodies from the broth

Added a handful of Asian blend frozen veggies

Ladled in some broth

Topped it with hoisin sauce, sriracha, chili pepper crisp in chili oil and fried garlic

And finished it with a handful of cilantro and some banty eggs cooked for 5 minutes marinated in a Tare.
 
This was perfect on a cold night!!

i did a batch of chili today but decided to change it up a little. the recipe i work off of calls for 2 lbs. of ground beef, 1/4 cup of chili powder and 2 cans of red kidney beans. i decided to double up on the meat so i got 3 lbs. of ground beef and 1 lb. of sweet Italian sausage meat. i prefer black beans over red so i always switch them out. the recipe my chili is based on calls for 1 28 oz can of diced tomatoes and 1 14 oz can of tomato sauce. i don`t like my chili too tomato-ey i want it more beefy so i drop both and add a small 8 oz can of tomato sauce. so this time i doubled the meat and doubled the chili powder to 1/2 cup but didn`t double the beans. i`ve made this quite a few times now and have modified the original recipe to my liking. i cook down the onion and red pepper and then add garlic and spices for just a minute and then the meat goes in. when meat is browned everything goes in the crock pot and simmers 6 hours. i have an 8 quart crock pot and this batch nearly filled it.

Indian comfort food. I adore butter chicken with paneer. This is a cheap prepackaged MTR brand paneer makhani with leftover rotisserie chicken leg quarters. Extra garam masala and a healthy shot of home grown Aleppo powder....Turned out great for a no mess meal.
 
Served it up with some Tasty Bites jasmine rice. 90sec to microwave the rice and let it set for the 3min it took to microwave the deboned chicken in the MTR makhani.

I can get paneer fairly cheap at the Indian market so i never really tried. This MTR stuff is surprisingly good, better than Swad IMO. They have several kinds. I normally get Butter Paneer Masala and Paneer Makhani. This actually might have been the Butter Paneer. I made it the other day so i kinda forgot. They are under $2 at our market. I might have $4.50 in that plate tops. A 8 pack of leg quarters is $5 at Costco already cooked. I used less than 2.
 
Love this little Korean market. They used to have a cafe attached and the food was sorta cheap vs others. Now they mainly just sell a few banchans made in house and they always have this gimbap. The kind i really like is super hit and miss since the cafe closed.
 
I got lucky and they had 1 more package of 2yr old kimchi. They seem to almost freak when i grab stuff like that. A half gallon of regular kimchi is just a buck more vs this tiny pack but it just aint the same in stew. I aint waiting months for it to get as ripe as i like for stew either :D They just crack a huge smile and nod when i tell them i want some good kimchi stew NOW. This is also the only place i can find that sells Lotte brand mirin. Sweet cooking sake with no salt added. Made in Korea but its very similar to Japanese mirin. Under $10 for a big bottle.
 
Good Havarti was my first major experience with imported cheese. When i was young my dad was part of a Cheese Lovers mail order club. We got a double cream Danish Havarti that was insane. Been hooked on it ever since but ive never found a domestic that was as good. Ive tried several from eastern Europe though that were really good. Russia or the Ukraine has a cheese that is very similar. German Butterkaise is really close too.
 
Good Havarti is very hard to find if not impossible, they never send the good stuff over here :(
German delicatessen would be the best place to find some.
