My name is Steve Stallard. Wanted to say hi and introduce myself. Looking forward to sharing thoughts, ideas and recipes for hot pepper dishes. I am a chef, business owner and enjoy cooking with a lot of different peppers and sauces. Hope to hear from you about your favorite peppers and dishes.

Very cool. Welcome! looking forward to seeing your posts here on the forum. To me, anything that overpowers a dish is too spicy. Everything needs balance and food is no exception to the rule.
 
I agree that too much heat ruins any dish, kills the flavor and your taste buds. Now, I understand the endorphin rush people get when just plain going for hot and have done that before. But it sure takes its toll :mouthonfire:
