Hotter ripe jalapeno hot sauce

Wellllll i managed to get a few Caribbean Reds to ripen and i still have a mess of ripe jalapenos soooooo.
 
Around 500grams of ripe jalapeno
2 Caribbean Reds
Maybe a couple 7 Pots too
4 golf ball sized red shallots
4-5 cloves of garlic
1 tsp cumin seed
2 tsp coriander seed
1/2 tsp chipolte powder
1/2 tsp salt
Red wine vinegar, white vinegar and water....I might use mostly white with a little bit of red balsamic instead.
3-4 tbs of fresh lime juice.
 
Additional salt and sugar to taste
 
My Caribbean reds threw a ton of pods for me, I mainly have used a mix of them, ghosts and reapers. Don't usually have a ton of ripe pods of one variety. You go all out on your sauce, I bet this is a good one
 
Mine had a late start. Sofar i got 5 ripe and maybe 5 more on the plant. Time is running out fast though. Nights are too cool and the last few days have been heavily overcast.
 
I have a big cabinet dedicated to just vinegars. I wouldn't go out and buy them just for hot sauce. I love good vinegar on salads and cukes. Roland's Dry and Crisp White Wine vinegar is a excellent value when i find it on sale. A liter is just under $5.
 
I almost always have shallots on hand. They are way cheaper at the ethnic markets, especially the Indian markets. They are about as cheap as red onions there.
