I've never made menudo and can't vouch for that recipe (only had in taco joints) but should give an idea of where to start. You can add additional hot peppers to the guajillo chile paste.

have made posole before. don't know why I haven't made menudo guess I should of mentioned that.  haven't been looking at different videos on youtube. just thought id see if there was any house secrets.Â
