One of my favorites is a spicy black garlic aioli, Mayo, 2-3 cloves of black garlic, a bit of rice wine vinegar, and some of your favorite hot sauce. Whirl it in a blender and Slather that on some focaccia bread buns with any protein. Good stuff.

I made this mango chilli chutney not long ago.

 

Sensational on a sammich, or on a steak, or with cheese, or with ice cream.............................................

I have a couple clear squeeze bottles on my list, a new blender, and some ideas.... I like how you bottle your sauces for home use...

Haven't used 'em for years.

 

I use a KA boat motor.

 

And a big bowl.

 

Hear me now.

 

Bleed me later.

 

For making sauce.

 

Its the sheeit.

 

And so are the squeeze bottles.

 

Because.

 

When you have to splooge.

 

Splooge.

A local Korean/Mexican fusion place uses something similar on the bulgogi tacos....Stuff is damn addictive.

My personal fav for lunches is this:

  • 1 cup mayonnaise
  • 1 Lime -- you'll need juice only
  • 1 teaspoon of roasted chopped garlic
  • 1 tablespoon of chili paste
  • salt and extra pepper to taste (and curry as an option)

Good with ham and chicken.

I like the lime in the mayo, too. In some Latino markets I see mayo "con limon" but there never seems to be much lime in it.

 

As an experiment, try spiking a little mayo with a SMALL amount of mojo criollo, a salty bitter citrus/garlic/herb/vinegar marinade.
