Made some bomb quesadillas tonight with steak, shrimp and mushrooms. Southwest salad on the side. Hit the spot for sure!

I reckoned it was da kine guac sauce.

I recollect years ago visiting Puerto Vallarta.

Seemed every joint from the resorts to the old town served up a guac salsa.

Usually a thin gruel like salsa made with avo's, a hint of lime, sometimes cilantro.

Some thinned it out with h2o and others with oil.

Served at every meal.

Along with rice, refried beans, and fresh tortillas.

Some would call that peasant food.

I call it the food of kings!

I have not yet been able to make an accurate duplication of those sauces I experienced there.

Maybe you have to be a mexican.

It sure is a fun ride to figure it out though.
