I had a gallon ferment that had 6 pounds total of peppers/veggies...so I'd have to think you're looking at around 3 pounds

I shoot for 800 grams per quart as far as ferments go, I dice not process but don't think that would matter much..Seems to leave almost the perfect head space, except for the most volatile ferments.  
 
So to answer your question 1600 grams..
