Help with Powders

I could use a crash course in the legal part of making and labeling powders.  I have a commercial kitchen I can use (yey me).  I am trying to figure out labeling requirements.  If all that is in a chili powder are chili peppers, do you really need all that nutritional information?  Seems like overkill.

Next time at store look at cayenne or jalapeno powder.

Funny you would mention that.  Went to look at my own collection.  Small, but still none have the normal labels.  Some of the commercial ones list a website for the information.  Patrons just sort of mail them to me.  Sometimes in little zip lock bags, but often with very professional looking labels on bottles with the safety seal.  Always figured they were commercial.  Maybe not.  Man, if someone wanted to kill me it would be so damn easy.
