Snowbound experiment

My first "food post." Hope I'm in the right place.
 
Never thought I would ever use the word "snowbound." Yet here finds me in North Charleston, S.C. a city deadlocked from a freak snowstorm (we can deal with hurricanes but snow, not so much.) Looking in the pantry/fridge for something to eat, I found a couple packs of Portabella mushrooms with "four cheeses" that I purchased on a whim a few days ago. Having had some delightful Lagunitas "12th of Never" ale, my palette sought something a bit salty and spicy. So a new creation was born, Witness, poartabella four cheese mushrooms with anchovies and wonderful locally made hot sauce.. Killer. I post it here in hopes I find it later and try it again. Haven't a clue any clever name to call it. Maybe just what it is?
 
 
I bought two cans of anchovies last night. One for the mushrooms I made and the second, I drained the oil, replaced it with hot sauce and ate it straight with a fork. My drinking buddy neighbor was looking at me with such disgust the whole time. It was damn good though!
 
Indeed! I eat them often on crackers like that. Cracker, Anchovy, pickled jalapeno slice and hot sauce. Wonderful with a few brews or a few more.... I'm hung up on the pickled jalapenos it seems.. I find myself coupling it with the anchovy often. The saltiness,vinegar and heat just do it for me...
 
I love anchovies and i love salt but sometimes the salt in them is a little much. A little cold water bath usually helps cut it down a little.

Funny the regional cuisines... I got turned on to Anchovies early in life while visiting New York and eating "real" Italian food. Went to Europe while in the service and found them in many dishes.. Sadly, here at most places they look at me like I've got two-heads when I ask for anchovies. There are a few (only a few) local Italian and Greek restaurants, that offer the choice. It takes a special trip to high end grocery store to even purchase a can for home use...
 
In the late 1980's I spent some time in France. In Marsaille, they had many street vendors selling pizza. "Fish, meat or cheese" they would say, and (for whatever the amount of Francs it cost) I recall it was about $2 American. They would cut a pizza in half, roll it up and serve it in wax-paper. It was great! The "meat" however, was not pepperoni but some kind of salami I "think."  The "fish" was anchovy and for $2 it rocked! The only drawback was they put black olives on all of them and the were whole and un-pitted. So a meal of this included some caution and frequent spitting out of seeds..

Would give my left n*t to try one of those... Not really, bit in theory. Sounds great!
