At a Crossroads with my Sauce Company

Hey guys!
 
I recently started a hot sauce company and have been doing pretty well over the past few months. Farmers markets are my main place to sell other than close family and friends. But whenever I work a market I sell out completely. So I know I'm on the right track. You put my sauce and I in front of a crowd, I can sell the s**t out of it :P However, I am at a crossroads. The weeks before markets I am slaving away after my regular 9-5. Cooking, bottling, labeling, sealing, etc. You know the drill. I can keep this up or I can relieve some of the stress by utilizing the proper equipment at a facility or by hiring a co-packer.
 
My question is where to find a co-packer or a kitchen that would have what I'm looking for?
 
I don't want to use a company like Endorphin Farms (yet) because it's just SO much sauce. I would need to order pallets of sauce and it would cost a boat load of money. I don't have that much capital nor the storage space, at the moment. I need a place where I can dedicate a weekend to pumping out sauce on high quality equipment OR a co-packer that can do lower tier orders to fulfill my needs.
 
Any advice would be greatly appreciated.

There are commercial kitchens that caterers use to prepare their food to be on the up and up with health code regulations. You pay a monthly fee to use it and you could maybe just hire some friends and family to help with the production.. Not sure what the rules and regulations are in new jersey but in California you need to have a commercial kitchen for health code reasons. Some MIGHT even have staff for hire to help you.
 
Wif you are a Veteran you may be able to use the kitchens at VFW or American Legion for free provided you have a current food handlers license at least that's what they are going to do for me.
