Hot fill/ hold question

When hot filling, after I invert and leave for 3 minutes do I leave the bottles in the fridge or out just in the kitchen ?

Assuming you handled everything properly and your acidity is low enough, they should be shelf stable, outside the fridge.

Whether you put in fridge or not, leave them upside down until they come to room temperature. Then store them right side up.
