Bacon Wrapped Poppers

Saw these in mashers food thread. Had to make them. Gave them my own twist tho. 
For the popper filling I used
onion chive cream cheese
6 pepper cheese curds(thread on that later)
GIP-Smoked serrano powder(been using this on everything now. so dank!)
Also was making them for the fam so I used some sweet snacking peppers as well as Jalapenos
stuffed a lil smoky in there too (never tried this before. pretty good Id say)
Then wrapped in Double Smoked Bacon. 
 
My cooking time was 40 min @ 250  fliped em around and 40 min @ 250. My oven is a lil wonky and I wanted to be sure the bacon fully rendered out and cooked with out burning so threw I them in a cold oven then kicked the heat on.(standard procedure for oven cooked crispy bacon)

Yeh I tried the Aji Confetti just by itself and it was sweet but not really hot. Then I put some in a bowl of bean and ham soup. Killer, woke it right up, has a wonderful heat with excellent Aji flavor. I would use these in pepper curds for sure.
 
These look delicious! I wonder how a maple drizzle would work on em...
 
...might be good...... I like bacon and maple. Id say 50/50 tho. the onion chive flavor might make it weird for me. Although I did have homemade maple syrup with smoked orange in it once. I think that the added smoked citrus could bridge the gap between maple and onion flavors.
