Certification classes

Ive seen some talk about classes to take for preservation , bottling etc. Could someone list off all the classes that are needed to become a hot sauce company?
 
"Needed" meaning REQUIRED...?  to become a hot sauce company? 
 
None*
 
 
*with several exceptions, but in some scenarios, no classes or certifications are necessary other than basic health district facility inspections and such~
 
 
 
 
Licensing, which includes any specific food processing certifications, is determined by your health licensing authority and the process authority who reviews and approves your recipes for processing.  The PA may require full on BPCS certification, or no further anything.  
 
Basically, each sauce and company will likely have slightly different regulations depending on your state, your processing facility, your recipe, or just use a copacker, or...or...or...
 
Start by calling your state Dept of AG or looking on their website for regulations for food processors.
