How long is a piece of string?
Totally depends on what you are creating, curry has a specific range of spices, Mediterranean has a specific range of herbs etc...

I dry fresh spices every year which are basil, thyme, Greek and Italian oregano, sage, marjoram, varieties of hot peppers, garlic and onion.........................

Spices are pretty important.. Are you saying you never use spices, ever? or just not in hot sauce? What do you put in your sauce then?

I made a habanero/tropical fruit sauce that had allspice, coriander, turmeric, and cumin in it.

Allspice and cloves are killer in Caribbean type sauces. Just be careful with the cloves or its gets really strong. I use about 4-5 whole fancy cloves for almost a quart of sauce.

No more like I never use dry spices in hot sauce.  Usually I'm using fresh things like garlic, onion, various fruits and veg.  I've yet to use any fresh herbs or dry spices
