Let's try to make chili!

I signed up to make mild-ish chili for Friday.  I like to take the maximum time to cook anything.  :)  Please shout out suggestions as I make a mess of the kitchen.  
 
I'm going to start with five meats.  Ribs, previously smoked pork butt, ground lean something, sausage and bacon. 
 
The bacon will be cooked tomorrow.  The grease will be used to cook the other meats.  Then I will sweat down some peppers and onions in the same pan.
 
In the pot will go the usual suspects and some surprises (PB2, bakers chocolate, clamato?).  I'm going to go with one can of black beans and one can of kidney beans - which should make it a light bean chili.  Then I am going to let it rest overnight before bringing it in Friday.  I'll post everything that goes in.  
 
Tonight's goal was to start the ribs.  To be continued...
 
Meat 1 - Ribs
 
2 racks of pork back ribs (on sale, bogo)
 
Rub
 
1/2 cup brown sugar
1/8 cup sea salt
1 T Ancho powder
1 T New Mex Red powder
1 t cumin
1 t fennel
1 t coriander
1 t szechuan peppercorn
1 t cardamom 
1 t cinnamon
 
Dry, slather with yellow mustard, apply rub, into bath.
 
Bath
 
2 bottles Guinnes
2 shots cheap rum
1/4 cup molasses 
3 large cloves garlic, minced
1 small yellow onion, halved and separated 
Cherry Dr. Pepper to cover
 
It will go for ~24 hours.  1 rack will be dinner for tomorrow.  The other rack will go in the chili.

Or his freezer.
 
Oh for sure he'll be cordial and the perfect host.

Ribs came out.  I hand shreaded them 3 times to make sure there were no bone chips or other unsavory bits.  This was added last.

Next I chopped 3 peppers and a medium sized onion.  Everything was cooked down until the onion was translucent.

While that was going, I chopped some pork butt.  I warmed it in the pot with beer.  (Yuengling)

Yikes - had to fix 4 typos.  
 
 
Next the peppers and onions met the pork in the pot.  Added another beer for liquid.

My wife started 1lb of thick cut apple wood smoked bacon (on sale).  Just got an early shot of the bacon before it was all in the pan.  The bacon was cooked until crispy.  While the bacon was cooking, I added:
 
1 can crushed tomatoes
1 can diced tomatoes
1 can tomato sauce 
1 can stewed tomatoes
1 can mild Rotel
1 big scoop beef bullion
1 jar of jalapenos
5 cloves of minced garlic
1 can of black beans, drained/washed (added a little can juice)
1 can of kidney beans, drained/washed (added a little can juice)

Then we cooked 1lb of 90% lean ground beef in the bacon grease

Then one package of Little Smokies went in

Topped it off with three large handfuls of the shredded ribs.  White pepper, smoked paprika, and 3 types of chili pepper we have accumulated/made.   Now the waiting game starts.

He did miss a few ingredients.
1 can braised tomatoes
1 can chopped tomatoes
1 can Italian tomatoes with basil
1 small can pizza sauce
Brandy
Whisky
Wine
3 cowboy shots
Turkey (probably the only ingredient that should be in a chilli con carne)
Roast chicken
Salmon
Tinned tuna
Red onion
Green onion
Fried garlic oil
Fish sauce
Cloves
And last but not least
...
Cabbage.
