Check out this newer variety called Intense tomato, we used a lot of that stuff in my workplace. Had a very deep robust flavor and very easy to cut because the texture of the tomato is very solid.
Best bang for your money is stanislaus from Cali imo. As good as any DOP San Marzano for a fraction of price. Better than Non-DOP SM but at a comparable price.
San Marzano is a classic for a reason. You can't go wrong with it. But if space is an issue, be aware that it's not the most compact variety out there.
