Does anybody have any experience drying or using dried eggplant?

I ve dried mine, as long as you use below 115f to dry the flavours are intact, just rehydrate them and use them as you normally would. I also dip them in salt water before drying that way they dont turn brown, can add a touch of lemon/vinegar too to the water dip.
