Temperature control for perfection

Wow, I thought I was the only one who knew what a French press coffee maker was.  Only know for dating one of those fancy women back in the day, but still.  So how do you know what the right temperature is?

sweet deal..  if I hadn't recently bought a hamilton beach  gooseneck at a similar price point I would be all over that variable temp kettle. 
 
  At my elevation water boils at 209 F ... It only takes about 80 seconds to fall down to 207  F which is where I bloom since I don't  pre-heat my hario dripper.    45 second bloom pause puts it at 205 F and  during 2.5 min  pour it drops out to about 197 F .  the control you get with a gooseneck is awesome for continuous pour without pauses (riding the bloom), and keeping the pour to the centre without over flowing  / breaking the edge of the ground bed.
