What state do you use peppers in the most when preparing meals, making sauce, etc? (multiple choice)

Yeah I can't participate in the poll until there's an "all of the above option," but this is definitely a goddess for courses kinda thing. I guess I tend to prefer applications where I am using raw, fresh pods to cook with, but there are situations where the dried pod's character is entirely altered from the fresh version, and only the dry/powdered will do in a particular recipe. An example would be chili con carne, where in likely to use both fresh poblanos and dried Ancho powder.. Plus about a dozen other chiles in various states, too.

They say that variety is the spice of life; I prefer some variety amongst my spices.

There is more used for certain applications for me though.
Examples;  In salads or as appetizers i'm more likely to use pickled peppers, but i also use fresh, hot sauces, and even powders in my salads too 
On cooked meat probably more likely to use sauces, but i might use any or all of them when preparing the meat.
The only choice i hardly ever use when preparing food is chili oil infusion and not for any specific reason, i just haven't very often. 
 
What happens if you make candied peppers and pulverize them in the blender? I bet it makes a nice hot sugar for ice cream or ribs etc.
 
Raw, and raw from a cooked state for me. I do make and cook with some powders/flakes, but it's raw/cooked from raw most of the time. I am counting raw as frozen pods as well, during the Winter.

I will top my already cooked food with sauces and mashes, but I don't really ever cook with them.
