I think I need to up my pepper game.

I’ve grown Tabasco, Cayenne, and Jalapeño peppers for the last couple of years. They were pretty hot to me at first, now that I’ve built up my heat threshold somewhat, what would be the next logical step up the scoville ladder ? Something with more heat and good flavor something that will make a good hot sauce?

yup they flake and powder just fine.
there are numerous varieties to choose from
examples...MOA, Bahama Goat, PapaDreadie, Foodarama, TrentonMarket
they come in just about every color (though ive not seen a bonnet that stays green when ripe.)
and if you want more heat there are some pretty fun hot crosses like scotchbrain and SB7J among others.
 
It may be easier to get some habanero plants than to start some scotch bonnets from seed,at this point in the game. I don’t have good luck with seeds.
But if I can find scotch bonnets and habanero plants at my local nurseries I will get both.

Many local nurseries are beginning to carry all sorts of "exotic" hot varieties as a novelty. You may be surprised what shows up at nurseries this year
Last year at my small town nursery I found reapers, scorpions, butchT, and morugas
 
+1 for chileplants.com. They have a good reputation and a nice selection of seedlings to choose from.
