Make your best taco.

And it doesn't have to be mexican.
 
I put ever dang 'thang on a flour or corn tortilla.
 
Thats a taco.
 
Make a bigger taco.
 
Thats a burrito.
 
Its all good.
 
Ever had a brisket and egg breakfast taco?
 
How about a sun dried tomato, goat cheese, roasted garlic, pequin, and refried bean taco?
 
The rules are this.
 
Keep it flour or corn.
 
Home made or store bought.
 
If you post a pita taco I will like you but then unlike you.
 
And then probably still like you again if it looks really good.
 
Get crazy.
 
 
Lime cilantro chicken thighs with pequin powder.
 
I love pequins.
 
Flat topped.
 
Like a naval aircraft carrier.

After watching that video Mike posted I'm going with no nanna leaves.
 
I'm cooking Cochinita Pipil, it's on the smoker and should be done in an hour or so. It's smelling great!!!
 
I made a marinate with fresh ground black pepper, cloves and corriander, garlic, onion and Achiota powder, salt, lime juice and orange juice
 
I cut large pieces of pork butt and marinaded it over night. I also kept a piece of butt to smoke like normal.
 
I smoked it uncovered for 2 hours, both are wrapped and still cooking.

I also made that sauce in the video and some Yucatan pickled onions, I couldn't mix the habs so everyone can eat. Both are chilling in the fridge.

Tacos barbacoa. My fav.
Excellent flavor and seasoning on the meat. Salsa rojo and Verde included but not pictured. Think its canned tomatoes and dried chili powders but still quite good. Not enough crisp on tortillas for me just warmed really.

No name on the truck for these. Rochester MN.
Really enjoyed the attention given to the griddled tortillas very crisp. and hand shredded queso was nice. The salsa rojo was fresh tomatoes and Chili's.

More chorizo tacos tonight. Same setup as last time except I cooked dice onion and jalapeño with the chorizo. I also used a fresh made arbol spiced salsa in addition to a really hot locally made sauce based on Moruga peppers. Ate it on a white corn tilla with the egg on the till instead of the top.

Which only makes me think...
 
The taco joints in heaven suck.
 
And He has to come to Texas to get some hot blue and righteous taco love.

Some tacos thrown together for supper tonight. Shredded beef, cheddar, avocado and all the good stuff from the garden that would fit.. lettuce, tomatoes, rau ram, red onion, some type of Mexican pepper, and salsa on top to protect the greens' modesty.
