I put ever dang 'thang on a flour or corn tortilla.
 
Thats a taco.
 
Make a bigger taco.
 
Thats a burrito.
 
Its all good.
 
Ever had a brisket and egg breakfast taco?
 
How about a sun dried tomato, goat cheese, roasted garlic, pequin, and refried bean taco?
 
The rules are this.
 
Keep it flour or corn.
 
Home made or store bought.
 
If you post a pita taco I will like you but then unlike you.
 
And then probably still like you again if it looks really good.
 
Get crazy.
 
 
Lime cilantro chicken thighs with pequin powder.
 
I love pequins.
 
Flat topped.
 
Like a naval aircraft carrier.

I was watching a program on the Food Network the other day, featuring this soft spoken health-focused semi-male Tasmanian guy who has kids who tattooes himself like The Crips, and gives himself hardcore military-style haircuts to complete the douchery.  The episode featured Tacos. 
 
He proceeded to put pumpkin and pineapple in said tacos. Almost threw the TV into the river. 
 
Here's some green stuff I found on the floor, along with some ground beef, chicken, beans, cheese and grated carrots.

Sauced with Warrant Man's "Homicide", and GIP's "Kiss The Sun". While I knew how good GIP's sauce was in this application, I found Warrant Man's sauce a great pairing with the spiced ground beef.

I started marinading a pork shoulder chunk (3-4lbs) last night. Coated it in HBDs jerk seasoning and then Walkerswood jerk seasoning paste. I roasted it on a wire rack at 425 for half an hour and then into a Dutch oven for 4 hours at 325.

The tacos are white corn tillas with cilantro lime rice, pork, a pineapple/red onion/cilantro/jalapeño/habanero/lime juice pico, and a little extra Walkerswood marinade.

These are from a local Mexican food joint. Its called Fajita Nortenas and includes beef and chicken fajitas and also chorizo. For $11 there is enough to fill up at least 4 flour tillas

And now for something completely different!!!
 
Some kind of sliced beef from Walmart. It had a Mexican name but its not seasoned. Not carne asada but similar.
 
About 2tbs of Spice Island taco seasoning mix....cant get this stuff anywhere but Costco or Amazon it seems. 1 tbs of my ripe jalapeno powder blend. I tossed the meat and powda in a ziplock with some chopped onion and garlic to marinate.
 
Browned up the seasoned beef in a little pork fat (because it was rather lean) and added a little water and a tbs of tomato paste for it to simmer/braise. Now im thinking what i want to go with it?...Well i got about half a can of black beans but i want the liquid to thicken some....Oh yeah i got some black lentils!!!!...Not quite hot enough and something is missing....Its missing a little hab aroma and flavor.....No problem...i got some dried Beni Highlands so in they went.....Yeah thats nice!!!
 
What to use for a garnish?....Not really in the mood for cheese. How about some pickled onion and cilantro relish....Ok...Sounds good. :D Chopped up a little onion and cilantro. Mixed in a little of my green lemon drop cider vinegar and a little lime juice....Almost a Salsa Criolla but not quite....Pretty damn good though!!!
 
I seemed to have forgotten something....What could it be?
