And it doesn't have to be mexican.
 
I put ever dang 'thang on a flour or corn tortilla.
 
Thats a taco.
 
Make a bigger taco.
 
Thats a burrito.
 
Its all good.
 
Ever had a brisket and egg breakfast taco?
 
How about a sun dried tomato, goat cheese, roasted garlic, pequin, and refried bean taco?
 
The rules are this.
 
Keep it flour or corn.
 
Home made or store bought.
 
If you post a pita taco I will like you but then unlike you.
 
And then probably still like you again if it looks really good.
 
Get crazy.
 
 
Lime cilantro chicken thighs with pequin powder.
 
I love pequins.
 
Flat topped.
 
Like a naval aircraft carrier.

That version is more like Moo Shu Lu (gravy style) and pretty common at Americanized Chinese restaurants too. Traditional style is pretty much dry with scrambled eggs. Ive never stepped foot in a Panda Express. I do love some Americanized versions of Asian food though. I adore good hot braised chicken or pork. When its made right hot and sour soup is the bomb when you have a cold.
 
The real classic Chinese "taco" is roast duck with the little steamed flat buns. Ive had them with red cooked pork also at the "authentic" places in town. Man do i feel sorry for you guys that dont have restaurants that serve REAL Chinese dishes.

To me those are more like sliders haha. Mandarin pancake is way more like taco.
 
Had a Taco Mi Casa taco for lunch yesterday. Hector told me that the chicken chipotle was good today so I had one. He was running low on fresh jalapeños, he grows his own, so he grew in a whole pickled one to make up for it. It was super tasty and only $2.50

We had carne guisada tonight. Flour tillas, Mexican cheese, fresh jalapeños and HBD sauce make for a simple tasty taco.

The griddle is really fun to cook on.
 
But there's a little mojo involved.
 
After a while you know exactly when to get the protein off the heat.
 
I generally hit it about 80 to 90 percent done.
 
Let the residual heat take care of the rest.
 
Nothing worse than dried out and over cooked.
 
Except maybe...
 
Liver and onions.
 
Plah!

And throw on some chile magic dust from parts unknown.

We had jerk pork tacos again tonight. All the Walkerswood goodies were used, paste, marinade and BBQ sauce. Along with HBDs jerk powder and Matouks hot sauce to top it off. The grocery store did not have habaneros to dice into the pineapple pico so I went heavy on the Matouks

Do pita bread gyros count as tacos??? If so the here is the steak gyros we had tonight. Skirt steak was marinaded in spicy Italian dressing and a little Worcestershire overnight. The bell pepper, jalapeño and onion were marinaded shortly in olive oil and spices. Some pickled pepperoncini, feta cheese, tzatziki sauce, fresh tomato and Matouks hot sauce finish it off.
