And it doesn't have to be mexican.
 
I put ever dang 'thang on a flour or corn tortilla.
 
Thats a taco.
 
Make a bigger taco.
 
Thats a burrito.
 
Its all good.
 
Ever had a brisket and egg breakfast taco?
 
How about a sun dried tomato, goat cheese, roasted garlic, pequin, and refried bean taco?
 
The rules are this.
 
Keep it flour or corn.
 
Home made or store bought.
 
If you post a pita taco I will like you but then unlike you.
 
And then probably still like you again if it looks really good.
 
Get crazy.
 
 
Lime cilantro chicken thighs with pequin powder.
 
I love pequins.
 
Flat topped.
 
Like a naval aircraft carrier.

as some of you might have noticed i don't often eat a lot of meat anymore :mope:  so this meal was quite a treat  :drooling:  :drooling:

Taco is; pita bread, Gyro-meat, tzatziki sauce, diced tomato,cucumber,onion  only had the fancy English cucumbers
 
Salad is; spinach, red and gold grape tomatoes,red bell pepper, English cucumbers, shredded carrot, slivered almonds,Feta cheese, Bleu cheese crumbles,Parmesan shreds,golden raisins,garlic-ginger wanton strips, avocado ranch dressing, and Aji confetti blend flakes

And I hear ya' on the meat 'thang.
 
I've eaten more meat in the last 6 months than in all of the last 3 or 4 years.
 
My stomach doesn't always like it.
 
But my mouth sure as hell does.

My attempt at papas con chorizo. Threw in some wild baccatum peppers to give it some pizzaz. (I love those peppers because they grow bite sized and have perfect heat!). Morning comfort food before hitting the yard work.

Growing up papas and chorizo was a staple food for us
 
Made simple carne guisada tacos tonight, just guisada and cheese on white corn tillas. I did add a large Reaper pepper diced up near the end of cooking for a little extra heat.

I made jerk pork tacos yesterday. I used Walkerswood products as usual. The fresh habaneros in the pico and the Matouks splooged on top made them pretty spicy.
