And it doesn't have to be mexican.
 
I put ever dang 'thang on a flour or corn tortilla.
 
Thats a taco.
 
Make a bigger taco.
 
Thats a burrito.
 
Its all good.
 
Ever had a brisket and egg breakfast taco?
 
How about a sun dried tomato, goat cheese, roasted garlic, pequin, and refried bean taco?
 
The rules are this.
 
Keep it flour or corn.
 
Home made or store bought.
 
If you post a pita taco I will like you but then unlike you.
 
And then probably still like you again if it looks really good.
 
Get crazy.
 
 
Lime cilantro chicken thighs with pequin powder.
 
I love pequins.
 
Flat topped.
 
Like a naval aircraft carrier.

I was making some soup, and I pulled the brains, tongues, eyes, and cheek meat off of these simmered heads. I realized the soup wouldn't be ready for a few hours, so it was time for a few tacos to stave off the hunger.

The meat is all pieces of the head minced together, topped with pico de gallo and cotija.
 
 
I was  :rofl: from the comments yesterday then tonight I checked in on Mark and found this. It made me  :rofl: again. Being from La and raised on all parts of animals I have no problems trying new dishes. Eyeballs might F me up. And teeth too, yeah teeth might not work but apparently it's only the TB's dishes.

Hell yeah, I think eating all of the offal/organs, etc. is definitely more common the closer to the border you're from. The eyes add a good texture element when minced together with the rest of the meat.

I gotta admit, biting into a tooth in a taco would be very unappetizing.

My local halal butcher keeps lamb testes and brains at the front of the butcher shop, since they are such good sellers. IDK, different strokes for different folks. I'm not much of a fan of eating anything from the satchel area, but it is a common food for some of the locals that frequent that butcher shop.
