easy pepper jam (habanero x strawberry x mint)

last night i made this super easy, super awesome hot jam, recipe went like this:

200g de-seeded red habaneros, any pepper will do depending how hot you want it
800g starwberries diced, any fruit really
400g jam sugar 2:1
dash of fresh mint leaves
a golfball sized lime

so, put all of this except the lime in a pot and stir it for a while until the sugar has vampirically sucked all water from the fruit, at which point it'll start looking like a sauce of some kind.

putting that aside we grate off the skin of the lime, which you've washed beforehand of course, and throw it in the pot. next dice the lime, cutting all of the bitter white stuff, it in there as well. now you can add some extra lime juice if you wanted, personally i did, but you dont have to.

now bring that pot to a simmer, stirring more or less furiously but continuously. try to to collect the foam that starts forming little islands and put it aside. now rolling boil for 4 minutes straight, blend if desired, and bottle up.

bam. easy.
